Pairings: Bivalves at After Dark

bivalves"The discovery of a new dish does more for human happiness than the discovery of a new star."  Jean Anthelme Brillat-Savarin, Physiologie du Gout, 1825

Seafood lovers, take note: bivalves, the organisms including mussels, clams, oysters, and scallops, are at risk. Oyster reefs are one of the most endangered habitats on Earth.  They've declined an estimated 85% over the past century due to overharvesting, declining water quality, climate change, habitat destruction, and disease. However, there's growing global interest in aquaculture as a sustainable method of meeting an increasing demand for protein and supporting conservation and restoration efforts in the face of climate change. Join Dr. Annaliese Hettinger of the UC Davis Bodega Marine Laboratory for a discussion of the science and policy of bivalves in San Francisco Bay.

In addition, you can experience sustainably sourced bivalves as both dinner and drink.  Sample chef Loretta Keller's Chilled Mussels with Curry and Cilantro and resident mixologist Clay Reynolds's Oysters with Stout Beer.

Join us for robust presentations and refreshing conversations designed to inspire your scientific palate.
