Tonight's Menu: Cinnamon Verité

Is the cinnamon in your cupboard "real"? Cinnamomum verum, obtained from the inner bark of an aromatic evergreen, is considered "true" cinnamon, but most cinnamon we consume is known as cassia, and is derived from related trees. With several species in the genus, how do we determine which one is the most authentic type of cinnamon? Join us for holiday-themed cooking demonstrations and frothy, fiery drinks. Compare flavors and experience the distinction between the taste of candies such as red hots and the more genuine-sometimes pungent-taste of Cinnamomum verum.

Join Artist-in-Residence Zarouhie Abdalian in enactments of Functions, a set of instructions that invite playful interaction among participants. These prose scores probing group social dynamics will be available for performance by Exploratorium visitors through Sunday, December 13, 2015.
