Update on Celiac Disease

Celiac disease is a genetically linked disease with an environmental trigger that can be set off by foods containing gluten. This elicits an autoimmune response that causes damage to the small intestine. Celiac disease is a surprisingly common, though frequently undiagnosed disease.
