Pairings: Hot Sauce

hot sauceWhen the Spanish brought chile peppers back from the New World in the 1500s, they didn't know they were creating a global hot-sauce monster. Today, from sambal to sriracha and piri piri to Pickapeppa, hot sauce at all points on the Scoville scale is popular in nearly every modern cuisine around the world.
